Shrimp Scampi Stuffed Spaghetti Squash (Serves 1)

Ingredients
- 1 small spaghetti squash, halved and seeded
- 1 package Oregon’s Choice Pacific Pink Shrimp
- 2 tbsp butter
- 3 cloves garlic, minced
- 2 tbsp purple onion, diced
- 2 tsp lemon
- 1 tbsp dry white wine (or juice of ½–1 additional lemon)
- 1 tbsp chopped parsley
- 1 tbsp chopped cilantro
- 1/4 tsp salt
- 1/4 tsp black pepper
- ¼ tsp red chili flakes
- grated Parmesan
Instructions
- Preheat oven to 400°F. Place squash cut-side down on a lined baking sheet and roast 35–45 minutes until tender.
- Let cool slightly and loosen strands with a fork while keeping shells intact.
- In a small bowl, whisk lemon juice, wine, salt, pepper, and chili flakes.
- Heat butter in a large skillet over medium heat. Add garlic and onion, cook for 1 minute then add shrimp and cook 1–2 minutes.
- Pour in lemon mixture and simmer 2–3.
- Stir in parsley and cilantro.
- Spoon shrimp and sauce into squash halves and gently toss with strands.
- Finish with Parmesan if using.
